Lutein is a type of carotenoid found in egg yolks, broccoli, spinach, kale, pepper, zucchini and squash. It prevents eye diseases and eye degeneration and protects the eye from sunlight damage. It is best absorbed when consumed with some fat, which is why lutein from yolk is much more accessible to our body due to the presence of fats even though the overall lutein concentration is lower when compared to other sources.
