Pectin is soluble fiber found in fruits that can lower cholesterol and triglyceride levels and improve digestion and some issues like diarrhea or constipation. It is believed to prevent some types of cancer, like colon and prostate one and can also have anti-diabetic effect and lower blood sugar levels. The best sources include apples and peel and pulp of citruses, but also plums, apricots, cherries and carrots. Due to its gel-like consistency, pectin is often used as a thickener for jams and jellies.
