Lycopene is a pigment with antioxidant properties, found in red and pink fruits. It belongs to a category of carotenoid phytonutrients. It is very important for heart health and is believed to protect from certain cancers and sunburns. Found in tomatoes, watermelons and pink grapefruit. In tomatoes, the amount of lycopene gets higher with cooking, therefore it is better to consume it in cooked form to improve its anticancer properties.
