Vitamin C

Everyone knows vitamin C is protecting our immunity and it can be used as cold and flu prevention. This water-soluble vitamin should be consumed on daily basis since it regularly leaves the body through urin and doesn’t get stored. It is very sensitive to high temperatures – the more we cook, the more vitamin C gets lost. Therefore, it is best consumed in raw or steamed form. However, eating too much vitamin C can cause diarrhea, nausea, gastritis, fatigue, headache and insomnia. It is necessary for collagen production and helps form tissue and heal wounds. Also, it helps treat anemia, because it supports iron absorption.
